Protein Packed Comfort Food for Breakfast

Now you can have a protein-packed comfort food breakfast that will combine the best of both worlds and start your day off right. You won’t believe how good these taste, and the protein will help power you through your day.

These are breakfast potato skins, and while they’re not particularly low in calories, they’re not awful for you either. Just keep to the kinds of ingredients suggested to get the healthiest version of this recipe.

 

You will need the following ingredients to make four servings.

  • 2 large russet potatoes
  • 1 cup shredded cheddar low-fat cheese
  • 1/2 cup fat-free tart cream
  • 4 strips of turkey bacon
  • Chives
  • 4 eggs
  • salt and pepper to taste

Bake your potatoes. When they are cooled down a bit, cut them perfectly in half and scoop out a good portion of the potato inside. Set this aside to use for a different meal–yet another one that will incorporate comfort food.

Fry or microwave the turkey bacon until it is crisp. Set the slices on a paper towel to remove any excess fat.

Chop up the chives. You may use dried chives instead of fresh ones if that is easier.

Divide the shredded cheddar cheese into four portions and fill each of the potato skins. Crumble the strips of bacon and sprinkle the equivalent of one strip over the cheese in each of the potato skins.

Break an egg on top of each of the potato skins. Bake in a 350-degree oven until the egg is “set.” Sprinkle with chives and savor the cheesy goodness of this delicious comfort food. This small but tasty meal will no doubt get your day off to a good start–and the protein will help you stay energized for several hours.
